This vegan raspberry ice cream is a delightful treat that requires no ice cream maker or bananas. It's creamy, fruity, and perfectly sweetened with maple syrup. Plus, it's dairy-free and bursting with raspberry flavor!
Ingredients: 3 cups frozen raspberries. 1 can full-fat coconut milk. 1/4 cup maple syrup or agave syrup. 1 teaspoon vanilla extract.
Instructions: Put the frozen raspberries in a food processor and pulse them until they become crumbly. Make a paste with the maple syrup, vanilla extract, and coconut milk. To make it smooth and creamy, scrape down the sides of the bowl as needed. Put the mixture in a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm. Let the ice cream sit at room temperature for a few minutes to soften a bit before you serve it. Serve and have fun!

Indulge in the delightful combination of creamy raspberry ice cream swirled with rich chocolate fudge sauce and tangy raspberry preserves, topped with fresh raspberries, all nestled in a crispy ice cream cone.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1 teaspoon vanilla extract. 1/2 cup raspberry preserves. 1/2 cup chocolate fudge sauce. 1/2 cup fresh raspberries, chopped. Ice cream cones.
Instructions: In a saucepan, heat the heavy cream, whole milk, and sugar over medium heat until the sugar dissolves. Remove from heat and stir in vanilla extract. Allow the mixture to cool completely, then refrigerate for at least 2 hours or overnight. Once chilled, pour the mixture into an ice cream maker and churn according to manufacturer's instructions until thickened. In a separate microwave-safe bowl, heat the raspberry preserves and chocolate fudge sauce separately until they're easy to pour but not boiling. Layer the churned ice cream, raspberry preserves, chocolate fudge sauce, and chopped raspberries in a container, swirling gently to create ripples. Cover the container and freeze for at least 4 hours or until firm. Serve scoops of the ice cream in ice cream cones and enjoy!
