Ingredients: 2 cups gluten-free all-purpose flour. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 1/2 cup Greek yogurt. 2 large eggs. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 pound fresh strawberries, hulled and sliced. 1 cup heavy cream. 2 tablespoons powdered sugar. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C. Grease and flour a 9-inch round cake pan. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and Greek yogurt. In a separate bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared cake pan and spread it evenly. Arrange the sliced strawberries on top of the cake batter. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Once the cake is done, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once the cake is completely cool, spread the whipped cream over the top and decorate with additional strawberries. Slice, serve, and enjoy your gluten-free Strawberries and Cream Cake!
