Spicy Vietnamese style meatballs . . 500gr minced Pork 500gr minced Chicken 2 finely grated Carrots 1/2 tbs Chicken stock powder 1 small onion finely sliced Half bunch finely chopped Coriander Wedge Lemon Extra Fish sauce to taste . . 1 cup sugar 1/3 cup Fish Sauce (Megachef brand) Place into pot with enough water to cover . . Bring sugar water to boil. Add lemon juice and fish sauce to taste. Turn down to simmer. Simmer until sauce is reduced and turned almost dark Amber in colour . . Be careful tasting boiling Caramel sauce can burn tongue easily. Use teaspoon to scoop liquid and allow to cool first then add more lemon or fish sauce as needed. Don’t burn sauce either or will taste bitter . . Mix minced meat and ingredients together. Sauté onion then form and drop rough made meatballs into pan . . Brown meat. Add a little water and simmer. Then add freshly made caramel sauce. Simmer down. Taste and add lemon juice/fish sauce if needed . . Add ground chilli powder and freshly chopped Coriander. Turn off heat, mix sauce and meat together well and serve with rice.
