Juicy and flavorful BBQ pork shoulder steaks paired with grilled mustard greens for a perfect balance of smokiness and freshness. The whole grain mustard vinaigrette adds a tangy kick to the dish.
Ingredients: 4 pork shoulder steaks. 1 cup BBQ sauce. 2 tablespoons olive oil. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. Salt and black pepper to taste. 1 bunch mustard greens, washed and trimmed. 1 tablespoon olive oil for greens. 2 tablespoons whole grain mustard. 1 tablespoon apple cider vinegar.
Instructions: Warm up the grill over medium-high heat. BBQ sauce, olive oil, garlic powder, salt, and black pepper should all be mixed together in a bowl. The pork shoulder steaks should have the mixture brushed on both sides. As long as the internal temperature reaches 145F 63C, the pork shoulder steaks are ready. Grill them for 10 to 12 minutes on each side. While the food is cooking, baste it with more BBQ sauce. Add the mustard greens to the grill with olive oil and salt and pepper while the pork is cooking. To make a vinaigrette, mix whole grain mustard and apple cider vinegar in a small bowl with a whisk. For the last three to four minutes, add the mustard greens to the grill and turn them over a few times until they are slightly charred and wilted. Take the red cabbage and pork shoulder steaks off the grill. After cooking the steaks, let them rest for a few minutes. Add the mustard vinaigrette to the grilled mustard greens, and then serve them with the BBQ pork shoulder steaks.
