A luxurious twist on classic lasagna, this creamy spinach and mushroom version is packed with flavor and comfort. Perfect for a cozy family dinner or entertaining guests.
Ingredients: 9 lasagna noodles. 1 tablespoon olive oil. 3 cloves garlic, minced. 10 ounces fresh spinach. 8 ounces cremini mushrooms, sliced. 2 tablespoons unsalted butter. 2 tablespoons all-purpose flour. 2 cups whole milk. 1 cup grated Parmesan cheese. Salt and pepper to taste. 2 cups shredded mozzarella cheese.
Instructions: Before you start cooking, heat the oven to 375F 190C. As directed on the package, cook the lasagna noodles. Once done, drain them and set them aside. Warm up the olive oil in a big pan over medium-low heat. Mix in the garlic and cook until it smells good. Put spinach and mushrooms in the pan and cook them until the mushrooms are soft and the spinach is wilted. Put away. Melt the butter over medium heat in a different saucepan. Add the flour and mix it in until it's smooth. Slowly whisk in the milk until the mixture gets thick. Add Parmesan cheese and mix it in until it melts and is smooth. Add pepper and salt to taste. Put a little sauce on the bottom of a 9x13-inch baking dish. Place three lasagna noodles on top of the sauce, then half of the spinach and mushroom mixture. Spread half of the rest of the sauce over the mushrooms and spinach, and then top with half of the mozzarella cheese. Add more layers with the rest of the noodles, mushrooms, spinach, sauce, and mozzarella cheese. Put foil over the baking dish and bake for 25 minutes. Take off the foil and bake for another 25 minutes, or until the top is golden and bubbly. Take a few minutes to let the lasagna cool down before you serve it.
