Tomato is undeniably a healthy food. Not only it is rich in vitamins C and A, It also contains a large amount of lycopene, a chemical substance that gives the red colour to vegetable and fruit. Lycopene has the properties of an antioxidant, which prevents heart disease and various cancers. Nevertheless, the tomato still has a little secret. Cooked or processed tomatoes are actually more healthy than fresh tomatoes. Why? Research by Cornell University suggests that cooking the tomato, increases the amount of lycopene, and makes the substance easier for the body to absorb [1]. Â

Baked Parmesan Tomatoes
Ingredients: - 4 tomatoes, horizontally halved - 1/4 cup parmesan cheese - 1 tsp dry oregano - 1/4 tsp salt and pepper or any spices of your choice - 1 tbsp olive oil
Instructions: 1. Preheat the oven to 230 degrees Celsius, place baking paper on a tray 2. Place the tomatoes on the tray, with the cut side up. Top up with parmesan cheese, oregano, salt and pepper. Drizzle with olive oil and bake for 15 minutes or until the tomatoes look tender.
