Vegan Stuffed Shells With Spinach And Ricotta
I just finished grating all the beautiful blocks of Italian cheeses. I couldn't resist eating some for strength 😉🤣🤣 They are delicious 😋 So now, I have my pizza dough, marinara sauce, and cheeses ready to go to make a spectacular pizza today!!! 🍕 I'm looking forward to that very much. This weekend, I'll use the rest of the sauce and cheeses and make some stuffed shells. I'm going to get some milk today so I can make the ricotta cheese that I'll use for the shells. I'm getting very hungry from writing this so I think it's time for breakfast. I hope that you all have a fantastic day!!!!! 😁😍🫂 I love to cook!! 😍😋😁

The Best Easy Ricotta Stuffed Shells (recipe)
Vegan Pesto Stuffed Shells (with Split Peas!)
oh quick recipe if anyone wants it for the stuffed shells:
box of large/jumbo shells 32 oz of ricotta 12oz of mozzarella 1/4 cup of parmesan spinach and onion (as desired. I did 1/4 of a small sweet and 5oz of spinach) dash of garlic salt and oregano 2 eggs sauce of your choice (I used traditional prego)
Preheat oven to 350 Boil shells to desired firmness (I went for a touch below al dente, about 12 minutes) Strain once done, let cool Blend spinach and onion w/ water (strain well) Mix ricotta, mozzarella, parmesan, garlic salt, oregano, eggs, and spinach/onion well Coat bottom of chosen tray with sauce of choice Fill shells with cheesy mix and place in tray Cover shells with sauce and mozzarella
Cover and bake for 45 minutes Remove cover and continue baking for 20 minutes Let cool Enjoy!
This does make a lot, but you can freeze the unbaked stuffed shells so feel free to make a seprate tray that's fully prepped to toss in the freezer so you can just pull it out and and put it in the oven for an easy meal at a later date!
