This Mushroom Asiago Chicken is great for a cozy dinner because it's creamy and full of flavor. Tender chicken, earthy mushrooms, and rich Asiago cheese come together to make a meal that will please everyone.
Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 1 cup sliced mushrooms. 2 cloves garlic, minced. 1 cup chicken broth. 1 cup heavy cream. 1 cup shredded Asiago cheese. Fresh parsley for garnish optional.
Instructions: Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 5 minutes per side. Remove from skillet and set aside. In the same skillet, add mushrooms and garlic. Cook until mushrooms are tender, about 5 minutes. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Stir in heavy cream and Asiago cheese. Cook until cheese is melted and sauce is smooth, about 5 minutes. Return chicken breasts to the skillet, spooning sauce over them. Cook for an additional 5-7 minutes, or until chicken is cooked through. Garnish with fresh parsley if desired before serving.
