Paleo Microwave Mug Bread
I cannot for the life of me remember where I got the original recipe for this, but I guess it doesn't really matter since I ended up modifying it anyway
so:
1/3 cup almond flour
1 tablespoon coconut flour
1/2 teaspoon baking powder
1 egg OR 1 flaxseed egg
AT LEAST 1/2 tablespoon oil
herbs of choice (optional)
and then microwave in a mug for 90 seconds
you should also probably let it sit in there for a minute
when it's done, it should look kind of like a muffin with no curves. I find that the best way to cut it is to turn it on its side and make inch-wide slices. if you use a normal egg as opposed to a flax one, it's gonna be bigger, so you'd get three slices instead of two. also, the flax one is softer and slightly more fragile
it's pretty filling either way
p.s. the original recipe said to oil the mug beforehand so it doesn't stick, but I keep forgetting to do it, and I haven't had any problems getting it out, so do whatever you want
Mug Bread 1/?
I'm a fan of James Morton, and of his mug bread recipe. It's a good alternative to my tried-and-true Jim Lahey recipe, which is dead easy in terms of effort but a drag in terms of time taken. Also a drag in terms of how sticky that dough gets. You all don't even want to know the dreams I've had about that dough. Sentient alien Jabba-the-Hutt dreams. Still, the ferment means the flavor can't be beat.
Anyway: Mug Bread. It tends to make a rather stout, small, crusty loaf. My last attempt was good for pairing with sharp cheese and pretending to be a beautiful medieval peasant lady. Not so good for making a sandwich with. In Morton's defense, last time I used only strong wholewheat flour because I was trying to use up a bag I'd ill-advisedly bought. Apparently that's not really how you make brown bread? Therefore: we try again.
