This Keto Mexican Pulled Chicken recipe is bursting with flavor and perfect for a low-carb meal. The tender chicken is cooked in a delicious salsa verde sauce, infused with traditional Mexican spices.
Ingredients: 1.5 lbs boneless, skinless chicken thighs. 1 cup chicken broth. 1/2 cup salsa verde. 1/4 cup diced onion. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp chili powder. Salt and pepper to taste. 1/4 cup chopped fresh cilantro for garnish. Lime wedges for serving.
Instructions: Place chicken thighs in a slow cooker. In a bowl, mix together chicken broth, salsa verde, diced onion, minced garlic, cumin, chili powder, salt, and pepper. Pour the mixture over the chicken thighs in the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
