The 4th Anniversary celebration continued this morning as we hosted members of the Maryland Beer Drinkers Club on Facebook for a collaboration brew day! "What MBDC Does" Hazy DIPA (8.2ish%) was designed collectively by the members of the group by a series of design surveys where they chose increasingly specific directions for the beer. They ended up designing a boundary-pushing brew centered on boosting aromatic compounds known as thiols. Thiols are naturally occurring organic compounds that boost tropical flavors of passionfruit, guava, and more. They're found in abundance in certain varietals of hops and ESPECIALLY in Sauvignon Blanc grapes grown in New Zealand. As part of this thiol hunting project, we've incorporated a brand new thiol precursor-rich product called Phantasm. Produced in limited quantities by @phantasm.nz, it's made from the dried skins of New Zealand Sauvignon Blanc grapes. In combination with a heavy mash hop of thiol precursor-rich New Zealand Cascade hops followed by fermentation with Cosmic Punch, the thiol liberating yeast from @omegayeast, this beer should scream with tropical fruit flavors. An accessory dry hop of Citra, Mosaic, and Nelson Sauvin will round out the flavor and aroma additions.
