Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Mix the pumpkin puree, maple syrup, melted coconut oil, and vanilla extract in a large bowl using a whisk. There is another bowl where you can mix the rolled oats, almond flour, baking powder, baking soda, salt, and spices ginger, cinnamon, nutmeg, and cloves. Just until they are mixed, fold the dry ingredients into the wet ones. Add the chocolate chips or raisins and mix well. Place spoonfuls of the cookie dough on the baking sheet that has been prepared. Use the back of a spoon to slightly flatten the dough balls. Put the cookies in the oven for 12 to 15 minutes, or until the edges are golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. Enjoy these tasty oatmeal cookies with pumpkin spice and maple.
