This is a tasty low-carb version of the traditional Cuban Pot Roast, also called Ropa Vieja. It is made with tender beef cooked in a tasty tomato sauce.
Ingredients: 2 lbs beef chuck roast. 1 onion, thinly sliced. 1 red bell pepper, thinly sliced. 4 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1/4 cup beef broth. 2 tbsp tomato paste. 2 tsp cumin. 1 tsp paprika. 1/2 tsp dried oregano. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: Add salt, pepper, cumin, paprika, and dried oregano to the beef chuck roast to make it taste better. Warm up the olive oil in a big pan over medium-high heat. Season the roast and sear it all over until it turns brown. Put the roast in a slow cooker. Put the red bell pepper, onion, and garlic in the same pan. About 5 minutes of cooking will soften the food. To the pan, add tomato paste, beef broth, and diced tomatoes. Use a stir to mix. Spread the tomato mix on top of the roast in the slow cooker. Keep the lid on and cook on low for 6 to 8 hours, or until the beef is soft and can be shred with a fork. Use two forks to shred the beef after it's done cooking. If you want, you can serve it hot with fresh cilantro on top.
