First, God doesn't have a consort of any kind in Judaism. There is some evidence that suggests some ancient people venerated Asherah as a consort to Yahweh, but it's important to note that while this religion would be related to Judaism, it would not itself be Judaism.
As for Lilith, she appears to be a kind of demonic entity that was influenced by the mythology of the lilitu, a class of malevolent beings believed to suck the life from babies (thus explaining SIDS) and sexually assaulted men at night (thus explaining nocturnal emissions). The first text to reckon Lilith as someone's consort was The Alphabet of Ben Sira, a medieval text with a satirical character. Lilith was imagined as the first wife of Adam, who became a demon after refusing to behave like a proper submissive wife.
In recent years, a number of conspiracy theories have sprung up around Lilith. One of them is that she was actually an ancient mother goddess who was demonized as patriarchy and monotheism took over. This is simply unsupported by evidence - again, Lilith's roots can be traced back to the lilitu.
