This Cilantro Lime Vinaigrette Healthy Taco Salad is a tasty and healthy take on a regular taco salad. It's a filling and tasty meal with lots of fresh vegetables, lean ground turkey, and a zesty homemade vinaigrette.
Ingredients: 1 lb ground turkey. 1 packet taco seasoning. 1 head romaine lettuce, chopped. 1 cup cherry tomatoes, halved. 1 cup black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1/2 red onion, thinly sliced. 1/2 cup shredded cheddar cheese. 1/4 cup fresh cilantro, chopped. 1 avocado, diced. 1/4 cup sour cream optional. Tortilla chips for garnish optional.
Instructions: In a skillet over medium heat, cook the ground turkey until browned. Add the taco seasoning and cook according to package instructions. Set aside to cool. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, red onion, and shredded cheddar cheese. Add the cooked and cooled taco-seasoned ground turkey to the salad mixture. In a separate small bowl, whisk together the cilantro lime vinaigrette ingredients see below. Drizzle the vinaigrette over the salad and toss to coat evenly. Top the salad with diced avocado and optional sour cream and tortilla chip garnish. Serve immediately and enjoy!
