I dug out my old 80s icecream maker that I got from, I think grandma or maybe my aunt? It’s the hand-cranked kind where you have to freeze the container overnight and then work fast, and the teflon of the container has a couple of ugly scratches, so I’ve been a bit paranoid about using it. But I looked it up once and for all, and apparently teflon is safe unless you heat it to 280 C or something, which isn’t really part of the procedure, so I decided not to worry about it.
It comes with a little recipe booklet that I’ve been using as a starting point. After a couple of failed attempts I made some kind of sorbet today using elderflower cider and an eggwhite. It turned out pretty ok (i.e. it was elderflower cider except colder), but I’m not sure the eggwhite was necessary. It gives it a kind of slimy texture, and when it melts you’ve got a pool of diluted eggwhite at the bottom of the bowl. 0/10 would not recommend, unless it’s hot and you’re prepared to overlook it for the sake of the frozen cider, in which case go ahead.
Last time I had it out I made ice tea sorbet, which was pretty nice except I underestimated how strong the tea needed to be. If I start drinking tea regularly again I should try to improve the recipe. Otherwise I’m going to give the orange + mint sorbet another try (I’ve been obsessed with putting mint in my orange juice lately).
