Ingredients: 2 3/4 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 teaspoon ground ginger. 1 teaspoon ground cinnamon. 1/2 teaspoon ground cloves. 1/2 cup unsalted butter, softened. 1/2 cup brown sugar. 1/2 cup molasses. 1 large egg. 1 teaspoon vanilla extract.
Instructions: Mix the flour, baking soda, ginger, cinnamon, and cloves with a whisk in a medium-sized bowl. Mix the brown sugar and butter together in a big bowl until the mixture is light and fluffy. Mix the molasses, egg, and vanilla extract into the butter mixture until everything is well mixed together. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Split the dough in half, make two disks out of it, and wrap each one in plastic wrap. Put the dough in the fridge for at least an hour to cool it down. Warm your oven up to 375F 190C and put parchment paper on baking sheets. One piece of the chilled dough should be rolled out to about 1/4-inch thickness on a lightly floured surface. Cut out the shapes you want with cookie cutters and place them on the baking sheets that have been prepared. Cut out more cookies until all the dough is gone. Reroll the scraps and do this again and again. After the oven is hot, bake the cookies for 8 to 10 minutes, or until the edges are just beginning to turn brown. Let the cookies cool for a few minutes on the baking sheets before moving them to wire racks to cool all the way. After the cookies have cooled, you can decorate them with icing or sprinkles.
