Garlic Butter Spaghetti & Meatballs

Just the other day we invited Meli and Chris over to eat to thank them for helping us with our guest room closet. We made them Garlic Butter Spaghetti & Meatballs and guess what?! They LOVED it. And we did, too. We have made the garlic butter sauce before but never with spaghetti & meatballs. What rock have we been hiding under all this time? (more…)

Ground Beef with Mushrooms and Spinach

Cook up a pound or so of lean ground beef in a large pot.

Add salt and pepper while it's cooking. (You can also saute some onions in here at this point of you want.)

Once it's almost but not quite done, add 8oz sliced mushrooms (any kind, but we prefer baby portabellas).

Saute them until the mushrooms are tender.

Add a 16oz bag of fresh spinach and cook until the spinach is completely wilted and cooked through.

That's it!

This recipe was not a hit with the family. D doesn’t like meat. Berto doesn’t like cheese. The Hubs doesn’t like ground meat or cheddar cheese. Sigh. This meal, to me, was wonderful! I do believe, though, it had less to do with the actual meal than with the fact this dish is true comfort food and it’s been over 100 degrees here in Cali.
