Yesterday I found a recipe that I want to try. It’s a Ukrainian recipe called nalysynky and they are mushroom stuffed pancakes — thin ones like crepes almost. I do know we have some Russian and Ukrainian on my grandfather’s side — my mother’s father. His last name, I’m told, means raspberry in Russian (which I think is pretty cute).
I’ve been tracing my mother’s matriarchal line for the most part, which is primarily our German lineage, so I don’t know about our family line from the Eastern Russia region.
Yet this recipe popped up here and it’s just what I needed. My wife and I made a trip to the Penn Dutch market north of here this past weekend and I picked up a pack of mushrooms I’d never had before, along with some fresh herbs and other things that will work really well with this recipe. I’m excited to learn more about the Ukraine and their food culture. Hopefully I’ll be able to get to it today or tmrw.
PS I also just received a book in the mail that I’m excited about, pictured below. It’s a witchy cookbook. Let’s make some yummy magic together!
These thin, stuffed pancakes – known as Nalysnyky in Ukrainian – come in many variations. This version with mushrooms, onions and sour cream
