Ingredients: 1 1/2 cups Arborio rice. 4 cups chicken or vegetable broth. 1 cup grated Parmesan cheese. 1/2 cup dry white wine. 1/2 cup diced onion. 2 cloves garlic, minced. 2 tablespoons butter. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Set Instant Pot to saut mode and melt butter. Add diced onion and minced garlic, saut until fragrant. Add Arborio rice and stir for 1-2 minutes until lightly toasted. Pour in white wine, stir until mostly absorbed. Add chicken or vegetable broth, season with salt and pepper. Secure the lid, close the pressure valve, and cook on high pressure for 6 minutes. Once done, perform a quick release, then stir in Parmesan cheese until creamy. Garnish with fresh parsley before serving.
