Salt and pepper to taste. 8 small flour tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup sour cream. 1/4 cup mayonnaise. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Lime wedges for garnish.
Instructions: In a bowl, combine lime juice, olive oil, garlic, jalapeno, cilantro, salt, and pepper to create a marinade. Place Mahi Mahi fillets in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes. Preheat your grill to medium-high heat. Remove the fish from the marinade and grill for about 4-5 minutes per side, or until the fish flakes easily with a fork. While the fish is grilling, warm the tortillas on the grill for about 30 seconds per side.
