With the smoky heat of Cajun seasoning and the cool sweetness of oranges, these vegan kebab skewers are packed with flavor. It's great for a summer barbecue or a quick dinner during the week.
Ingredients: 1 block firm tofu, pressed and cubed. 2 oranges, peeled and segmented. 1 bell pepper, cut into chunks. 1 red onion, cut into chunks. 2 tablespoons olive oil. 2 tablespoons Cajun seasoning. Salt and pepper to taste. 8 skewers, soaked in water.
Instructions: Put Cajun seasoning, salt, pepper, and olive oil in a bowl. Add the cubed tofu to the bowl and toss it gently to coat it all. Put tofu cubes on skewers and then add orange segments, bell pepper chunks, and red onion chunks one after the other. Warm the grill up to a medium-high level. Put the skewers on the grill and cook for 8 to 10 minutes, turning them over every so often, until the vegetables are soft and the tofu is nicely charred. Take it off the grill and serve it hot.
