This filling and healthy Paleo slow cooker beef stew is made with only clean, whole ingredients. Simmering veggies, flavorful herbs, and grass-fed beef combine to make a delicious comfort food that's ideal for a cosy evening.
Ingredients: 2 lbs grass-fed beef stew meat. 4 cups beef broth. 1 onion, diced. 3 carrots, chopped. 3 celery stalks, chopped. 2 cloves garlic, minced. 2 tbsp tomato paste. 1 tsp dried thyme. 1 tsp dried rosemary. 1 tsp sea salt. 1/2 tsp black pepper. 2 tbsp arrowroot powder optional, for thickening. Chopped fresh parsley for garnish.
Instructions: Add the tomato paste, onion, carrots, celery, garlic, thyme, rosemary, salt, and pepper to a slow cooker along with the beef broth. Stir in the beef stew meat after adding it. Once the meat is tender, cook it covered for 7-8 hours on low or 34 hours on high. If desired, create a slurry by mixing arrowroot powder with a tablespoon of water. In the final half hour of cooking, stir the slurry into the stew to thicken the broth. Garnish with freshly chopped parsley and serve hot.
