A hearty and healthy minestrone soup made with a mix of beans, pasta, and vegetables that is cooked slowly in a crockpot.
Ingredients: 1 cup diced carrots. 1 cup diced celery. 1 cup diced onion. 2 cloves garlic, minced. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz cannellini beans, drained and rinsed. 1 can 15 oz diced tomatoes. 6 cups vegetable broth. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon dried thyme. 1/2 cup small pasta such as elbow or ditalini. 2 cups chopped spinach or kale. Salt and pepper to taste. Grated Parmesan cheese for serving.
Instructions: Carrots, celery, onion, and garlic should all be put in the slow cooker. Chop up tomatoes, add vegetable broth, oregano, basil, thyme, and kidney beans. Mix well. For 6 to 8 hours, or until the vegetables are soft, cover and cook on low heat. Add the pasta and chopped spinach or kale about 30 minutes before you serve. Mix well. Add pepper and salt to taste.
