Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 onion, finely chopped. 3 carrots, sliced. 3 celery stalks, diced. 4 cloves garlic, minced. 1 tsp dried thyme. 1 tsp dried rosemary. 1 tsp dried oregano. 1/2 tsp salt. 1/4 tsp black pepper. 4 cups chicken broth. 1 cup water. 1 lb potato gnocchi. 2 cups fresh spinach. 1 cup heavy cream. 1/2 cup grated Parmesan cheese.
Instructions: In the Instant Pot, press "Saut" and cook the garlic, onions, carrots, and celery until they are soft. Salt and pepper should be added along with the chicken dices. Turn the chicken over and cook until it turns brown. Add water and chicken broth. Use a stir to mix. Put the gnocchi in the pot. In the Instant Pot, put the lid back on and set the timer for 5 minutes at high pressure. Do a quick pressure release when you're done. Take off the lid and add the fresh spinach. Stir it in until it wilts. Add the heavy cream and mix in the Parmesan cheese until it melts and is well mixed in. Serve hot, and if you want, top with extra Parmesan.
