Also called citrus caviar, is a very special citrus fruit from Australia. The finger lime has the size and shape of a finger. The outside of this fruit can vary in colour, but it usually is (dark) green to brown red. Every finger lime contains shiny granules that look like pearls. The fleshy pearls sometimes get compared to caviar. The colour of the caviar flesh varies from orange-red, lime green to yellow and has a fresh lime flavour. The citrus caviar balls burst open in your mouth and gives you a fresh blast of flavours.

Rare availability and high cost
Because of small scale production, finger limes are very difficult to find in the market place. They get distributed to large metropolitan areas and are mainly available at white table cloth restaurants and at some high-end retail stores. Mixologists use them in drinks and chefs work with finger limes as a garnish. Chefs primarily use them in seafood recipes and Asian Fusion dishes.
Flavor - They taste like a cross between a lemon and a lime juice… and are slightly tart. Finger limes look cucumbers with a dark outer skin, when cut lengthwise in half the inner caviar jewels can be scooped out and enjoyed in so many ways.
