Mmmm, this simple snack really hit the spot. I LOVE sushi but have been trying to limit my grains so I try to experiment with different ingredients to see what I can come up with. ✨🤔💡 For this veggie roll I spread a little bit of my homemade kale pesto onto nori, loaded it with baby spinach, some @miyokos_kitchen vegan mozz, red bell pepper, cilantro, and some avocado. ✨🥑💕 They didn’t fall apart, and tasted fantastic, so these rolls were a winner in my book. I used to be a sushi fanatic so as many successful rolls I can make at home makes me a happy camper. 🌟🌟🌟 I was thinking while I was enjoying each bite how thankful I am for my body, and the slow but steady healing that’s happening. Just a few months ago I was avoiding all things with fat content because they made me feel horrible, but I’ve been noticing that I’ve actually been feeling good with the addition of a bit more now. 🎉🎉🎉 I still eat relatively low fat so that my body can continue to detox, repair, and store energy but meals like this make me feel super grateful. I don’t often eat cheese alternatives, and this was a special treat but oh boy was it good, Miyoko’s know what they’re doing. ✨😋💦 I hope you all are having a good weekend. What made you happy today?
