Week 23: summertime eating is the best! āļøš
1ļøā£ Cold Rice Noodles with Peanut Lime Chicken (Smitten Kitchen) oh boy!!! Ā this is all I want to eat on hot summer days! Ā Iām not kidding. šš i typically donāt make the same thing over and over again but this one is going to get made again VERY SOON!!
2ļøā£ Red Lentil Cauliflower Burger with Onion Rings & Roasted Peppers (Vegan Richa) these were pretty good but a lot of different steps and iām not sure it was worth it. Ā the onion rings are tasty but overall get lost in the burger (next time, iād add less water to get a thicker coating and serve them on the side?) Ā totally spaced on snapping a pic too.
3ļøā£ Chicken, Brie & Fig Sandwich (Earlās Restaurant) THIS IS A TASTE SENSATION!! iāll make this forever (and still continue to order it whenever we go to Earlās)
4ļøā£ Salmon Tikka with Cucumber Yogurt (Jamie Oliver)Ā havenāt made this in ages and itās so good! Ā not sure if it was better this time because itās been so long or because weāve started buying local wild salmon š
5ļøā£ Sugar Snap Pea and Carrot Soba Noodles (Cookie + Kate) this was yummy altho i think for next time, as per kateās suggestion, iād swap out the snap peas for thinly sliced red pepper. try as i might, i just donāt love snap peas. Ā
6ļøā£ Crispy Fish with Lemon-Dill Sauce (Cooking Light) next level fish sticks. Ā i bought halibut instead of cod for whatever reason and boy was it good!
We've started sneaking in a weekly date night the last couple weeks so maybe I should just plan 6 meals/week from now on. Larb (one of my faves!) coming up next week fo sho
