When do we use definate articles? Dl we use them all the time?
Not ALL the time, but pretty much all the time
The major exception that comes to mind is when you're using estudiar or aprender you don't often include the definite articles, and you don't often use the definite articles when you use a verb + language, like hablar español/italiano/chino/japonés but you do tend to use it when you're starting a sentence - like el escocés es una lengua "Scottish is a language"

In general, you use the articles more than you don't use them. When I don't know, I tend to use the article.
I feel more comfortable omitting them if I'm listing things like a shopping list, or if I'm in an informal setting or texting people

OMG!?! is a game originally intended for learners of German but I have no doubt that it can easily be adapted to any foreign languages. Form teams of 3 or 4 students and distribute each team the following cards: one diamond, one club, one heart and one spade. The suits represent DER, DIE, DAS respectively. You may be wondering what the fourth option is. Spade stands for OMG!?! This is the moment when a team admits that they have no idea what article belongs to the noun in question. If a team scores, they will be awarded 1 point, if their answer is incorrect, they will lose 1 point. If they hold the spade in the air, that is a safe move because they will neither earn nor have to give up on any points.
Currently reading an Anne's House of Dreams fic which I am guessing is written by an author whose first language doesn't have articles (a/n, the). In early chapters, there were almost no articles used, though more are being used in later chapters.
It's super interesting to me because it's demonstrating how unecessary articles are. It's a bit jarring at first, but every sentence is perfectly understandable without articles. I'm also entertaining myself by trying to figure out what first language the author might have by observing other linguistic quirks but no conclusions so far.
