These lemon snowball cookies are vegan and taste great. They are soft and melt in your mouth. Any time of the year, they're great for a sweet treat!
Ingredients: 2 cups all-purpose flour. 1/2 cup powdered sugar, plus extra for coating. 1 cup vegan butter, softened. 1/4 cup lemon juice. Zest of 1 lemon. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, cream together the vegan butter and powdered sugar until light and fluffy. Add lemon juice, lemon zest, vanilla extract, and salt, mix until well combined. Gradually add the flour, mixing until a dough forms. Scoop out tablespoon-sized portions of dough and roll into balls. Place the balls onto the prepared baking sheet, spacing them apart. Bake for 12-15 minutes, or until the bottoms are lightly golden. Allow the cookies to cool slightly on the baking sheet, then transfer to a wire rack to cool completely. Once cooled, roll the cookies in powdered sugar to coat evenly. Store in an airtight container.
