Ingredients: 2 cups diced cucumbers. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 jalapeo pepper, seeded and minced. 2 cloves garlic, minced. Juice of 1 lime. Salt and pepper to taste. 8 small corn tortillas. 1 cup shredded lettuce. 1 cup cooked black beans. 1 cup diced avocado. 1/2 cup vegan sour cream. 1/2 cup vegan shredded cheese optional.
Instructions: In a large bowl, combine the diced cucumbers, diced tomatoes, diced red onion, chopped cilantro, minced jalapeo pepper, and minced garlic. Squeeze the juice of one lime over the mixture and stir to combine. Season with salt and pepper to taste. Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are warm and pliable. To assemble the tacos, spoon some of the cucumber salsa onto each tortilla. Top with shredded lettuce, cooked black beans, diced avocado, and a drizzle of vegan sour cream.
