These vegan cinnamon buns are delicious and can be eaten for breakfast or dessert. They're fluffy, soft, and full of cinnamon goodness, and they don't contain any animal products.
Ingredients: 3 cups all-purpose flour. 1 packet instant yeast. 1 cup almond milk. 1/4 cup vegan butter, melted. 1/4 cup maple syrup. 1 tsp vanilla extract. 1/2 tsp salt. 1/2 cup brown sugar. 2 tbsp ground cinnamon.
Instructions: In a large mixing bowl, combine flour and instant yeast. Warm almond milk until lukewarm, then add melted vegan butter, maple syrup, vanilla extract, and salt. Pour wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for about 5 minutes until smooth and elastic. Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size. Preheat oven to 350F 175C and line a baking dish with parchment paper. Roll out the dough into a rectangle about 1/4 inch thick. In a small bowl, mix brown sugar and cinnamon. Spread melted vegan butter over the dough, then sprinkle evenly with the cinnamon sugar mixture. Roll up the dough tightly, starting from the long side. Cut the rolled dough into 12 equal pieces and place them in the prepared baking dish. Bake for 25-30 minutes, or until golden brown. Serve warm and enjoy!
