Ingredients: 4 bone-in pork chops. 1 onion, sliced. 1 bell pepper, sliced. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 can 6 oz tomato paste. 1/2 cup chicken broth. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste.
Instructions: Add oregano, basil, salt, and pepper to the pork chops. Put the pork chops in the crock pot. Add bell pepper slices, minced garlic, and onions on top. Place tomato slices, tomato paste, and chicken broth in a bowl and mix them together. Put the pork chops and vegetables in the slow cooker. Then, pour the tomato mixture over them. Cook on low for 6 to 8 hours or high for 3 to 4 hours, until the pork is soft. If you want, you can serve it hot and top it with fresh herbs.
