Oysters. Bluff oysters, so special, so rare, so delectably pleasurable. They are not farmed, don’t stay fresh after a day, and sources for the pottled lot are still few, and that is why they are prized even more. The harvesting of these wild bivalves are controlled strictly, with just several boats allowed, and quotas imposed. They are available fresh only in New Zealand, and Chile(!). So I went to Bluff, which is the southern most town in New Zealand, and got fresh ones on the half shell at Fowler’s. The Bluff oysters had just come in from the boat that morning. An unforgettable experience, and some of the best oysters I’ve ever had (I have enjoyed plenty).
