Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 tablespoons vegetable oil. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 small onion, sliced. 2 cloves garlic, minced. 1/4 cup black bean sauce. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sugar. 1/2 cup chicken broth. 1 tablespoon cornstarch, mixed with 2 tablespoons water. Cooked white rice, for serving.
Instructions: In a wok or sizable skillet, heat the vegetable oil over high heat. Stir-fry the chicken slices for 34 minutes, or until they are no longer pink. After taking the chicken out of the pan, set it aside. Add a little extra oil to the same pan and add the bell peppers, onion slices, and minced garlic. Cook for two to three minutes, or until they begin to soften. After cooking, add the cooked chicken back to the pan and stir it into the vegetables. Combine the oyster sauce, sugar, soy sauce, and black bean sauce in a small bowl. After adding the sauce mixture to the chicken and veggies, stir to ensure that everything is evenly coated. After adding the chicken broth, simmer the mixture. Give it two to three more minutes to cook. To thicken the sauce, stir in the cornstarch-water mixture. Simmer for 2 more minutes, or until the sauce is glossy and thickened. Over cooked white rice, serve hot stir-fried chicken with black bean sauce. Ingredients: 1 block extra firm tofu, pressed and cubed. 2 tablespoons cornstarch. 2 tablespoons vegetable oil, divided. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons Chinese black bean sauce. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1 tablespoon brown sugar. 1/4 cup water. Green onions, sliced, for garnish. Sesame seeds, for garnish.
Instructions: Set oven temperature to 400F 200C. Coat cubed tofu evenly with cornstarch by tossing it in it. One tablespoon of vegetable oil should be heated on medium-high heat in a big skillet. Add the tofu cubes and cook for 45 minutes on each side, or until golden brown and crispy on all sides. Take out and place aside the tofu from the skillet. Add the last tablespoon of vegetable oil to the same skillet. Add the minced ginger and garlic, and cook for about a minute, or until fragrant. Add soy sauce, rice vinegar, brown sugar, sesame oil, Chinese black bean sauce, and water, and stir. After bringing the sauce to a simmer, let it slightly thicken for two to three minutes. Return the crispy tofu to the skillet and toss it around to ensure that the sauce coats it evenly. Top the hot Chinese black bean sauce-topped crispy tofu with sesame seeds and sliced green onions.

Take off the heat and serve warm. If preferred, garnish with sesame seeds or sliced green onions.
