This Paleo sweet potato hash is a hearty and delicious breakfast option that's perfect for a Whole 30 meal. Packed with colorful vegetables and crispy bacon, it's a satisfying dish that will keep you fueled throughout the morning.
Ingredients: 2 medium sweet potatoes, peeled and diced. 1 onion, diced. 2 bell peppers, diced. 4 slices of bacon, chopped. 4 eggs. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Heat the olive oil in a big skillet over medium heat. When the bacon is crispy, add the chopped bacon, remove, and set aside. Add the diced sweet potatoes to the same skillet and cook for 8 to 10 minutes, or until they are tender. Cook the bell peppers and diced onion in the skillet for about five minutes, or until the vegetables are soft. To taste, add salt and pepper for seasoning. To make room for the eggs, push the vegetables to one side of the skillet. Once eggs are cracked into the skillet, cook them to the desired doneness. Drizzle the hash with the cooked bacon. If desired, garnish with fresh parsley. Enjoy while hot!
