Ingredients: 1 cup all-purpose flour. 1 1/2 cups whole milk. 2 large eggs. 1/4 teaspoon salt. 2 tablespoons unsalted butter, melted. 6 slices of ham. 1 1/2 cups grated Gruyre cheese. 6 large eggs. Chopped chives for garnish. Salt and pepper to taste.
Instructions: In a blender, combine the flour, milk, 2 large eggs, salt, and melted butter. Blend until the batter is smooth. Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray. Pour a small amount of the crepe batter into the skillet and swirl it around to coat the bottom evenly. Cook for about 1-2 minutes or until the edges start to lift. Place a slice of ham on one half of the crepe, sprinkle with Gruyre cheese, and crack an egg on top. Season with salt and pepper. Fold the other half of the crepe over the filling, creating a half-moon shape. Cook for another 2-3 minutes until the egg whites are set and the cheese is melted. Carefully transfer the crepe to a plate and garnish with chopped chives. Repeat the process with the remaining batter and fillings to make additional crepes. Serve the French crepes with ham, cheese, and eggs hot and enjoy!
