Misir wat (Ethiopian red lentils)
A wat (or wot) is an Ethiopian simmered stew spiced with berbere. Minimal ingredients, aromatic spice blends, and long frying and simmering times come together to produce this intensely flavorful lentil dish. The use of both a sautƩing spice blend and a finishing spice blend added in closer to the end of the cooking time ensures that smooth, even heat is chased by complex floral aromatics in each bite.
