These baked Caprese tuna meatballs are a tasty keto-friendly take on a traditional Italian dish. Fresh basil, cherry tomatoes, and parmesan cheese give them a lot of flavor, and they can be eaten as a meal or as an appetizer.
Ingredients: 2 cans 5 oz each tuna in water, drained. 1/4 cup almond flour. 1/4 cup grated parmesan cheese. 1/4 cup chopped fresh basil. 1/4 cup diced cherry tomatoes. 1 clove garlic, minced. 1 egg. Salt and pepper to taste. 1/4 cup shredded mozzarella cheese.
Instructions: Preheat the oven to 375F 190C. In a mixing bowl, combine drained tuna, almond flour, parmesan cheese, basil, cherry tomatoes, garlic, egg, salt, and pepper. Mix until well combined. Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until meatballs are cooked through and lightly browned. Remove from the oven and sprinkle shredded mozzarella cheese over the meatballs. Return the meatballs to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
