Maple Herb Roasted Carrots with Cranberries A delightful blend of sweet and savory, these roasted carrots are enhanced with a maple herb glaze and complemented by tart cranberries. Perfect as a side dish for any meal. Ingredients 2 lbs. carrots, washed w/ skin on + tops trimmed 1 tablespoon Extra virgin olive oil ½ cup pure maple syrup 1 teaspoon dried oregano 1 teaspoon dried parsley 1 teaspoon dried basil ½ teaspoon garlic powder ½ teaspoon ground cinnamon pinch of ground allspice 2 cups dried cranberries Instructions Preheat the oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper. In a large bowl, add the carrots along with the maple syrup and herb seasonings (save about 2-3 tablespoons and set aside), mixing everything together with your hands (you can use gloves if preferred) until the carrots are fully coated. Place the carrots onto the prepared baking sheet, lined side by side, and bake for 15-20 minutes or until the carrots are golden, slightly wilted, and tender. Brush the tops with the remaining maple herb mixture and serve on a platter. Sprinkle dried cranberries atop and on the sides of the carrots.
