Savor the rich, smoky flavors of this delicious potato tart with a dollop of sour cream, melted cheddar, and crispy bacon. cooked to perfection on a BBQ smoker or wood pellet grill.
Ingredients: 4 large potatoes, thinly sliced. 8 slices of bacon. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 2 tablespoons chopped chives. Salt and pepper to taste.
Instructions: Preheat the wood pellet grill or BBQ smoker to 225F 107C. Arrange the sliced potatoes in a single layer on a smoker-safe tray. Place the tray of potatoes on the preheated grill or smoker and smoke for 1 hour. While the potatoes are smoking, cook the bacon slices until crispy. Crumble or chop into bits. After 1 hour, remove the tray of smoked potatoes from the grill. Increase the grill temperature to 375F 190C. Layer the smoked potatoes in a greased cast-iron skillet, alternating with bacon bits and shredded cheddar cheese. Place the skillet back on the grill and smoke for an additional 30 minutes or until the cheese is melted and bubbly. Remove from the grill, top with sour cream and chopped chives. Season with salt and pepper to taste. Serve the smoked potato tart hot and enjoy!
