This Buffalo Chicken Caesar Salad combines the spicy flavors of buffalo chicken with the classic Caesar salad. Kale and Parmesan cheese crisps make it even better. This dish tastes great and is filling, so you can eat it for lunch or dinner.
Ingredients: 2 chicken breasts, grilled and diced. 1/2 cup buffalo sauce. 1 bunch kale, stems removed and chopped. 1 head romaine lettuce, chopped. 1/2 cup grated Parmesan cheese. 1/4 cup Caesar dressing. 1/4 cup olive oil. Salt and pepper to taste. 4 slices of Parmesan cheese.
Instructions: In a bowl, toss diced chicken with buffalo sauce until evenly coated. In a separate bowl, massage kale with olive oil until slightly softened. In a large salad bowl, combine kale, romaine lettuce, and Caesar dressing. Toss to coat evenly. Divide salad among serving plates and top with buffalo chicken. Sprinkle grated Parmesan cheese over the salad. For Parmesan cheese crisps, preheat oven to 375F 190C. Line a baking sheet with parchment paper and place Parmesan cheese slices on it. Bake for 5-7 minutes until the edges are golden brown and crispy. Remove from oven and let cool for a few minutes. Break the Parmesan crisps into smaller pieces and sprinkle over the salad. Season with salt and pepper to taste. Serve immediately and enjoy!
