Ingredients: 1.5 lbs boneless, skinless chicken thighs, cut into chunks. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon smoked paprika. 1 teaspoon cumin. Salt and black pepper to taste. Zest of 1 lemon. Zest of 1 orange. 2 tablespoons fresh lemon juice. 2 tablespoons fresh orange juice. Wooden skewers, soaked in water for 30 minutes.
Instructions: To make the marinade, put olive oil, oregano, smoked paprika, cumin, salt, and black pepper in a bowl and mix them together. Add orange zest, lemon zest, orange juice, and lemon juice to the base of the dish. Combine well. Put the chicken chunks in a shallow dish or a plastic bag that can be closed again, and pour the marinade over them. Make sure the chicken has a good coating. Put the mixture in the fridge for at least two hours or overnight. Warm up the grill over medium-high heat. Using the wet skewers, thread chunks of chicken that have been marinated.
