Made from leftover almond pulp, dates, and raw cacao powder, these Raw Choco Almond Pulp Protein Balls are a tasty and healthy snack. They have a lot of protein, fiber, and healthy fats, so you can eat them at any time of the day to get more energy.
Ingredients: 1 cup almond pulp. 1/2 cup dates, pitted. 1/4 cup raw cacao powder. 1/4 cup almond butter. 2 tablespoons maple syrup. 1/4 cup shredded coconut optional, for coating.
Instructions: In a food processor, combine almond pulp, dates, cacao powder, almond butter, and maple syrup. Process until a dough forms, about 1-2 minutes. Roll the dough into small balls, about 1 inch in diameter. Optional: Roll each ball in shredded coconut to coat. Place the balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator for up to one week.
