Ingredients: 1 pizza dough. 1/2 cup tomato sauce. 1 cup shredded Monterey Jack cheese. 1/2 cup cooked and diced chicken breast. 1/4 cup diced red bell pepper. 1/4 cup diced red onion. 1/4 cup canned corn kernels. 1/4 cup canned black beans, drained and rinsed. 1/2 teaspoon chili powder. 1/2 teaspoon cumin. 1/4 teaspoon garlic powder. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 2 tablespoons chopped fresh cilantro. Sliced jalapeos optional, for extra heat.
Instructions: Start by heating the oven up to 450F 230C. On a lightly floured surface, roll out the pizza dough to the thickness you want. Place the rolled dough on a baking sheet or pizza stone. Spread the tomato sauce out evenly on the dough, but leave a little space around the edges for the crust. Put half of the Monterey Jack cheese shreds on top of the sauce. Spread the corn, black beans, red bell pepper, and red onion dices out evenly on top of the cheese. Salt, black pepper, chili powder, and cumin should all be mixed together in a small bowl. Add this mix of spices to the pizza toppings. Put the rest of the Monterey Jack cheese on top of the pizza. Let it bake in a hot oven for 12 to 15 minutes, or until the crust is golden brown and the cheese melts and bubbles. Take the pizza out of the oven and, if you want, sprinkle it with fresh cilantro and sliced jalapeos. Wait a minute or two before cutting it up and serving it.
