Ingredients: 1 cup all-purpose flour. 1 cup water. 2 tbsp vegan butter. 2 tbsp granulated sugar. 1/4 tsp salt. 1/2 tsp vanilla extract. 1/4 cup granulated sugar for coating. 1 tsp ground cinnamon for coating. Cooking spray or oil for greasing.
Instructions: Preheat oven to 425F 220C. In a saucepan, combine water, vegan butter, sugar, salt, and vanilla extract. Bring to a boil over medium heat. Remove from heat and add flour. Stir until a dough forms. Transfer dough to a piping bag fitted with a star tip. Pipe dough onto a baking sheet lined with parchment paper, forming churros of desired length. Bake for 20-25 minutes or until golden brown and crisp. In a shallow bowl, mix 1/4 cup sugar and cinnamon. While churros are still warm, lightly spray or brush with oil, then roll in cinnamon-sugar mixture until coated. Serve warm and enjoy!
