A tasty and nutritious treat, these raw avocado cookie bars are ideal for anyone on a Paleo diet. Almond flour contributes a nutty flavor and texture, and avocado supplies healthy fats and creaminess. These bars, which are flavored with cocoa powder and sweetened with raw honey or maple syrup, make a filling snack or dessert.
Ingredients: 2 ripe avocados. 1 cup almond flour. 1/4 cup raw honey or maple syrup. 1/4 cup cocoa powder. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. Pinch of salt.
Instructions: Process avocados in a food processor until smooth. Mix in the cocoa powder, melted coconut oil, almond flour, honey or maple syrup, vanilla extract, and a small amount of salt. Blend until thoroughly mixed and dough-like consistency is achieved. Grease a square baking pan with cooking parchment. Evenly press the dough into the dish. To set, place in the refrigerator for a minimum of two hours. After it sets, take it out of the fridge and slice it into bars. Present and savor!
