1) in a cold dutch oven place 4 bacon strips cut in half, cook them on medium heat until slightly golden brown but not crispy, remove from pot

2) in the bacon fat, fry 1/2 a white onion, diced, 3 tbsp of diced ginger, and 4 cloves of sliced garlic until fragrant

3) add 6 cups of water and bring to a boil

4) add a vibes based amount of tamari, gochujang, rice vinegar, and 4 chicken bouillon cubes. boil for 5 min uncovered. add salt to taste.

5) add a package of thai rice noodles (yes i know its not ramen but i have celiac so we do what we can) and cook until tender

6) in each bowl, add a tbsp of kewpie mayo and whisk in a cup of broth until well incorporated.
