Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon curry powder. 1/2 cup coconut oil, melted. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 flax egg 1 tablespoon ground flaxseed + 3 tablespoons water. 1 teaspoon vanilla extract. 1/2 cup vegan chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, salt, and curry powder. In a separate bowl, mix the melted coconut oil, brown sugar, and granulated sugar until well combined. Prepare the flax egg by mixing the ground flaxseed and water. Let it sit for a few minutes to thicken. Add the flax egg and vanilla extract to the wet ingredients and mix. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the vegan chocolate chips. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, leaving space between each cookie.
