Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1 cup carrots, shredded. 1/2 cup red cabbage, thinly sliced. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup pomegranate seeds. 1/4 cup walnuts, chopped. 3 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 tablespoon maple syrup. Salt and pepper to taste.
Instructions: In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let it cool. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, carrots, red cabbage, red onion, parsley, feta cheese, pomegranate seeds, and walnuts. In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup, salt, and pepper. Pour the dressing over the quinoa mixture and toss to coat evenly. Refrigerate the salad for at least 30 minutes before serving to allow flavors to meld. Serve chilled, garnished with extra parsley and a sprinkle of feta cheese if desired.
